DIRECTIONS OF INSTITUTIONAL DESIGN IN THE SPHERE OF FOOD CONSUMPTION IN THE CONTEXT OF NEW GLOBAL CHALLENGES
Abstract
The urgency of the transformation of institutions in the sphere of food consumption in the context of new global challenges is shown. Structural changes in the demand and organization of trade in food products in a pandemic are considered. The interpretation of the essence of the concept of “institutional mechanism” is systematized; the analysis of the dynamics of the structure of disposable resources of households using a differentiated approach is carried out. The trend of a decrease in the share of expenses for the purchase of food products for home meals in the final consumption expenditures of households has been analyzed. The necessity of institutional design in the sphere of real incomes of the population is substantiated. This necessity determines the vector of long-term trends in effective demand and personal consumption of food.
